I came to know that starting with VMware vSphere 6.7, VMware added some additional filter which may not let you increase or expand the datastore from vCenter, you would need to do it from the individual host and then re-scan the datastore from vCenter if required. To troubleshoot it further, I open a case with VMware. It could have been one strike, but I was not able to do the same for other datastores as well. To validate it further, I logged into one of the ESXi hosts where this datastore is presented, when I tried to increase the datastore from there, the new datastore capacity was available and I was able to increase the datastore successfully.
